Sweet Potato and Lentil Shepherd's Pie
This is a winter favourite of mine. I am not the biggest fan of mince so when my lovely housemate made this dish a couple of months ago, I was instantly hooked. This recipe has been adapted with a little improvisation from myself. Lentils are a great source of protein and serve as a perfect substitute in this classic dish. This is a beautiful balanced meal for those vegetarians (and non vegetarians) out there.
Ingredients
700g sweet potato
2 tins of green lentils
1 tin chopped tomatoes
1 vegetable stock cube dissolved in 400ml boiling water
1 courgette
2 medium carrots
2 cloves of garlic
Salt and pepper to season
Method
1. Pre-heat the oven (180 degrees)
2. Peel and chop the sweet potato into small cubes. Boil for roughly 15 minutes or until they’re soft enough to put a knife through.
3. Grate the courgette and carrots.
4. Chop up the onions and fry in a pan with the garlic for 2-3 minutes
5. Add the grated carrot and courgette and fry for a further 2 minutes.
6. Add the stock, chopped tomatoes and lentils.
7. Simmer for 20-30 minutes. You want the liquid to evaporate so adjust the time accordingly.
8. Whilst the lentil mixture is cooking. Drain the sweet potato and mash into a smooth consistency.
9. Once the lentil mixture is cooked, place into a baking tray. Cover with the mashed sweet potato and bake in the oven for 30 minutes.
