Banana Bread
This slightly healthier, than a typical sugar laden banana bread, uses alternatives such as honey and bananas to sweeten it. It should be noted that honey is not a "sugar free" alternative. Some health blogs tend to market their baked goods as sugar free when in fact it is packed with honey or maple syrup. Despite being a naturally occurring source, these substances are still simple carbohydrates that are absorbed into the blood stream a lot quicker than complex carbohydrates. Baking is never going to be entirely guilt free or healthy however using alternatives such as ground almonds, a source of polyunsaturated fatty acids, instead of flour will add additional nutrients to your diet. Everyone deserves a little sweet treat now and again and this is a great option for you to try out.
Ingredients
4 Medium Bananas
200g Ground Almonds
50g Honey
50g Milled Flaxseed
3 Medium Eggs
1/2 Tsp Bicarbonate of Soda
1/2 Tsp Vanilla Extract
1 Tsp Cinnamon
Method
1. Preheat your oven to 170 degrees
2. Prepare your baking tin by lining it with baking paper
3. Combine the bananas, honey, bicarbonate, vanilla extract, cinnamon and lemon. Blend using an electric whisk or put into a food processor
4. Once completely blended, mix with the ground almonds and flaxseed in a big mixing bowl ensuring there are no lumps
5. Pour into the baking tin and bake for 1 hour. Check the cake is done by putting a knife into the cake. If the knife comes out clear without any cake mixture sticking to it, then it's good to go. If not, bake the cake for another 15 minutes or so. If the cake starts to burn on the top just cover it with some baking paper to ensure the rest of the cake has time to cook
6. Leave to cook and serve with some butter or coconut oil and a tea of course!
