Nutty Granola
I love having granola for breakfast despite knowing it's loaded with hidden sugars. Making your own granola takes away that guilt as you can control exactly what goes into it. This recipe is for a typical classic granola but feel free to change the nuts/dried fruits around to suit your preferences. It's one of the quickest recipes on this website and will last all week.
Ingredients
200g Rolled oats
50g Flaked (or whole) almonds or mixed nuts
50g Pumpkin/sunflower seeds
50g Desiccated coconut - optional
50g Raisins
3 Tbsp honey
3 Tbsp Olive oil
Method
1. Pre-heat the oven to 170 degrees and then combine the oats, nuts, seeds, desiccated coconut into a big mixing bowl.
2. Add the honey and olive oil to the mixture and stir, ensuring all of the mixture is coated with the honey and olive oil. This enables the oats and seeds to stick together and gives the granola it's classic golden colour after toasting.
3. Line a baking tray with tin foil and spread the mixture on the foil evenly. Try to get it as thin as possible as this will ensure all of the oats are toasted and will mean you won't have to continue to stir as it bakes.
4. Place the tray into the oven and bake for roughly 10 minutes. Check to make sure the oats at the outer edges do not burn. Bake until golden. If the mixture is not spread evenly or thin enough, simply keep turning over the oats at intervals to ensure it all gets enough heat.
5. Remove and leave to cool. Store in a dry place once cooled to room temperature.
6. Serve with berries, yoghurt or just simply with milk - whatever you fancy!
