Chocolate Almond Cookies
This recipe is identical to the ginger cookie recipe; you just add cacao instead of ground ginger. It’s as simple as that and these are just as tasty. I've had all of my girl friends over to try these out for me; unsurprisingly these delicious cookies got the seal of approval.
Ingredients
200g ground almonds
50g ground flaxseed
20g cacao
100g honey
½ tsp bicarbonate of soda
Method
1. Pre-heat the oven to 150 degrees
2. Mix all the ingredients in a mixing bowl
3. Add a little more honey if the mixture does not begin to stick together
4. Mould the mixture into small balls (of similar size preferably)
5. Line a baking tray with baking paper or grease tin foil with butter
6. Take your molded balls of mixture and flatten into a 1cm thick circular biscuit shape
7. Bake for 10-12 minutes or until they turn golden
8. Remove from the oven and leave to cool. When you initially remove these from the oven they will be slightly squishy but after they are left out for a little while they will turn crispy.
