Beanie Burgers
Two weeks ago my housemate and author of The Critical Crunch ran into my room following a disaster with the hand blender. Luckily it wasn’t as bad as you’re probably imagining. The injury arose whilst she was in the midst of making bean burgers, hence where this recipe originates. Here is my adaptation of an appetising, inexpensive and versatile meal that took no more than 30 minutes to make.
Ingredients
1 tin of kidney beans
1 tin of chickpeas
2 medium onions
The juice of ½ lemon
1 tsp. turmeric
1 tsp. fennel seeds
1 tsp. cumin
1 tsp. paprika
Methods
1. Preheat the oven to 180 degrees
2. Chop and fry the onions until brown
3. In a mixing bowl, add all of the ingredient including the fried onion
4. (Carefully) Use a hand blender to blend everything until smooth
5. On tin foil, lined with olive oil/butter to grease, mould the bean mix into six evenly shaped circles
6. Bake for 10-15 minutes on one side, depending on the thickness of your burgers
7. Following this, remove from the oven and carefully turn the burgers over with a spatula and bake for another 10-15 minutes. You want the outside to harden but ensure you keep an eye on them in case they begin to burn.
These burgers can be enjoyed on their own, with a salad, or in a bun (or sweet potato bun? See picture). I mashed up my last two burgers and used them to make stuffed peppers which were also delicious and another way to enjoy this simple recipe!
