Cauliflower Base Pizza
Ingredients
Base
1 Cauliflower
1 Tsp oregano
1 Tbsp wholemeal flour
1 Egg
Sauce
1 tin of chopped tomatoes
A sprinkle of red wine vinegar
1 Tbsp of extra virgin olive oil
1 Tsp of salt
A handful of fresh basil
Toppings
30g Mozzarella
Spinach
Red Onion
Method
1. Cut up the cauliflower and put into a food processor. Blend until the cauliflower is cut finely. Ensure that it does not form a puree as this will not stick and will become too watery
2. Microwave the cauliflower for 2-4 minutes or until it softens. Drain any excess water
3. Add the rest of the base ingredients to the cauliflower and mix together
4. Layer some olive oil/coconut oil onto a baking tray
5. Shape the base mixture onto the prepared baking tray
6. Spoon 2-3 tablespoons of the sauce onto the base and spread evenly
7. Put your toppings on and bake for 10-12 minutes at 180 degrees or until the base is golden brown and crispy
