Sweet Potato, Almond Base Pizza
This is very simplistic recipe and a great alternative to a typical pizza base. It is not crispy or chewing, however it does stick together fairly well and creates a nutritious base for whatever toppings you decide to add.
Serves 1
Ingredients
Base
25g ground almonds
1 medium sweet potato
1 egg (whites)
Tomato Sauce
¼ tin chopped tomatoes
1 tsp oregano
2 tsp tomato puree
Methods
1. Peel, chop into small cubes and boil the sweet potato for roughly 10 minutes. You should be able to get a knife through with ease.
2. Mash the sweet potato until it forms a puree.
3. Add the ground almonds and mix in with the sweet potato thoroughly.
4. Add the egg to help the mixture stick together. I’ve recommended using ½ the egg to do so but you may need to use a little more or less. You want the mixture to be malleable and not too sticky.
5. Line a baking tray with greased foil.
6. Shape the “dough” into a pizza shape and make sure it is at least 1cm thick.
7. Cook this for 15 minutes.
8. During these 15 minutes you can make the sauce. Add all of the tomato sauce ingredients into a saucepan and stir for 5-7 minutes. You want the mixture to loose some of its water and thicken slightly. Leave to the side until the base is properly cooked.
9. Once the top has started to harden, you need to remove this from the oven and turn it over. This needs to be done extremely careful to ensure the base does not loose its shape. What I recommend to do is to have another piece of foil prepared. Using a spatula, get underneath the base and separate it from the foil that it’s on. Place the other piece of foil on top and flip carefully to transfer the base onto the other piece of foil. Now the top should be less hardened and you can cook it for an additional 10 minutes to get the best results.
10. Now the base is properly cooked you can add the tomato sauce and the toppings of your choice. I recommend cooking for an additional 5-7 minutes with these ingredients on top. The cook time will depend on the toppings you decide to put on.
When I made this dish, the toppings I chose were:
Roasted pepper and courgette (which I roasted before)
Spinach
Olives
Turkey breast
Enjoy.
