Sweet Potato and Chickpea Curry
Ingredients
350g sweet potatoes
1 tin chickpeas
1 tin chopped tomatoes
1 medium onion
100g greens
1 tsp turmeric
½ tsp peri peri flakes
½ tsp cayenne chilli powder
½ tsp ground ginger
Salt and Pepper
Method
1. Peel, cut into cubes and boil the sweet potato for 5-7 minutes. Ensure you are able to put a knife in at ease. Drain and leave to the side.
2. Chop up the onion and fry for 2 minutes until brown.
3. Add the chopped tomatoes and stir in well.
4. Add the spices, adjusting according to your preferences. When I initially made this, I used 1 tsp. of each which was unfortunately a little too spicy. Nevertheless, it was nothing a little Greek yogurt and milk couldn’t neutralise.
5. Add the greens and stir in for another minute or so.
6. Finally add the cooked sweet potato and chickpeas. You want the tomatoes to form a thick sauce-like texture therefore you don’t want to add any water or stock. This means that the addition of each ingredient needs to be quite efficient to prevent it all from burning.
7. Add some seeds and Greek yogurt to serve.
