Beef Stew
In the midst of a hectic week at work/university and wanting a nutritious meal, that doesn’t take more than half an hour to make? Try my spicy coconut fish curry, which takes under 30 minutes to prepare and cook and is one of your two recommended portions of oily fish (predominantly from the salmon) per week.
Serves 3
Ingredients
300g diced beef
3 medium sweet potatoes
1 tin chopped tomatoes
1 vegetable stock cube
3 medium sized carrots
2 leaks
3 stalks of celery
1 medium onion
2 cloves of garlic
Rosemary
Bay leaves
1 tbsp. mixed herbs
Salt and pepper to season
Methods
1. Preheat the oven at 180 degrees.
2. Chop the vegetables, ensuring they’re quite chunky.
3. Dice the onion and fry for 2 minutes in a casserole dish with the diced beef and garlic. You want to brown the meat before adding the vegetables.
4. Add the stock, dissolved in 500ml boiling water, to the diced beef and onion.
5. Add the vegetables, chopped tomato and top up with boiling water. You want the water to cover the top of the vegetables.
6. Add the herbs and put in the oven with a lid on for roughly 2hrs.
Tip: I wanted my stew to be fairly soup-like, however if you want a thicker consistency remove from the oven after 2hrs and cook on the hob without the lid to enable the liquid to evaporate.
